Indian recpies, like any other cuisine, has its own list of cooking techniques and equipment that are needed to get things working in the kitchen. To follow the recipes, it is essential to understand the terms. Several recipe writers feel that a little gets lost in the translation to English, and they use the original terms.

Indian cooking evolved in a quieter world where there was more time and help for the kitchen. It would not make much sense in today’s modern Indian or a Western kitchen to attempt to mimic the cookware and tools that existed in the original Indian Kitchen. I will therefore give you a list of items that I think are practical and useful for everyday Indian Cooking.

Indian cooking entails an enormous amount of chopping, pureeing and pasting. This device is worth its weight in gold in the time it saves. The staple of north Indian food consists predominately of Lentils, Vegetables and Roti (round, flat wheat bread). North Indian cuisine is also noted for its high use of dairy products. Milk, paneer, butter and yogurt are all used as either an ingredient in the cooking process or served as a side dish.

South Indian cuisine is an ubiquity of rasam and sambar, also known as “rasa and saaru.” Sambar is prepared in different ways. South Indian favorites are the bajji, bonda, vada, idli, poori and dosa. Western Indian cuisine has some main food groups such as the Goan, Maharashtrian and Gujarati.

You see, cooking Indian food is not that hard as long as you have the right spices, which can be easily availed in the market or can be planted in your backyard.
