A Banana Pancake Recipe The Whole Family Will Love

***How many times have you had bananas go bad right after you have purchased them. Sometimes it is hard to use them up and not get sick of the flavor. Over ripe bananas taste terrible so using them in a delicious manner is a little difficult. They can be made into bread or muffins but what if you do not have the time for that. Instead make a banana pancake recipe that will only take a little bit of time and a few other ingredients. Bananas get over ripe when the skins start to turn brown and spotty. This is when they are absolutely perfect to cook with. Make sure the fruit of the banana does not have brown or black spots and if it does cut them out. If the consistency is a bit mushy it is time to use them to make pancakes.

To make banana pancakes you two bowls. In one you combine one cup all purpose flour, one tablespoon of sugar, two teaspoons baking powder, and one fourth teaspoon salt. Mix these ingredients well and set aside.

Break and egg and beat it in bowl number two. Then add 2 tablespoons vegetable oil and 1 cup of milk and mix it in. You need to mash 2 bananas on a plate or in another little bowl until they are totally mushy then add it to bowl number two. Use a kitchen whisk to incorporate all the ingredients then start to add some of the ingredients from bowl number 1 gradually while beating it in with the whisk. The batter may become too stiff for you to stir and that is when you switch to stirring with a big spoon. The batter will be thick and lumpy.

Heat a skillet on the stove and add a little vegetable oil to the bottom. Take about one fourth cup of the batter and pour it into the skillet. Once the one side gets brown turn it over for the other side to brown as well then remove to a platter and place a little bit of butter on top.

You can add other ingredients to the banana pancakes in order to give them a little more flavor and unexpected zing. Make peanut butter and banana pancakes by adding 1 or 2 tablespoons of your favorite peanut butter and then spread jelly on top. To make a great dessert pancake add 1 fourth cup of mini chocolate chips to the batter. You can do this with the peanut butter and make chocolate, peanut butter, banana pancakes. Another way to make an interesting pancake is to add a fourth cup of sliced strawberries to the batter.

Now the question is what do you put on top of these pancakes? You can slather them with regular syrup or just put a dollop of whipped cream. You can put chocolate syrup on them for a dessert style pancake. Other products you can pour on top of your banana pancake are honey or caramel sauce for ice cream. This banana pancake recipe will come in handy for special breakfast or lunch and even for a lovely dessert.
