***I originally found the basis for this recipe in a collection edited by Alexa Stace, and have since tweaked it considerably to make it my kind of pudding – very intensely chocolatey, moist, and dense, and not too sweet. It doesn’t keep very well I’m afraid – it goes very hard when cold (which doesn’t stop the human dustbin in our house consuming it at whatever temperature and age he finds it, bless him).
This recipe is a good example of when cocoa can be a real boon – baked products are like alchemy in some ways – if you play around with ratios of ingredients too much, you get an inedible result. With chocolate flavoured products this can be a problem, as the fat content of proper chocolate can spoil a recipe – enter cocoa, which ups the anti by giving an intense chocolate flavour, without turning a sponge cake mixture into a greasy brick.
I added the cherries to give a bit of added interest to the recipe – but you could leave them out, or replace them with other dried fruit if you prefer – apricots, figs, mango or papaya should all give an equally palatable result.
Note: the pudding rises a LOT in the oven – it will look tiny when it first goes in the pudding basin, but don’t be tempted to use a smaller basin or you’ll end up with a horrible burnt mess on the bottom of the oven. Also, the pudding tends to absorb a lot of the moisture in the sauce, so you may want to serve the pudding with some pouring cream, custard, or icecream.
Makes 3-4 small but filling portions

Ingredients
Pudding:
30g (1oz) Butter, softened
60g (2oz) Caster Sugar
60g (2oz) Dark Chocolate
1 Large Egg
55g (2oz) Plain Flour
2? tsp Cocoa Powder
100g (3.5oz) Dried Cherries
? tsp Baking Powder
Sauce
150ml (5 fl oz) Milk
30g (1oz) Butter
40g (1.5 oz) Dark Chocolate
1? tbsp Granulated Sugar
1 tbsp Golden Syrup

Method
Measure out the sauce ingredients first, and either heat gently in a small saucepan over a low heat for about 10 minutes, or heat in the microwave in suitable container for about 2 minutes at high power. Whisk the ingredients well to combine them and set aside.
Grease a 1.1 litre (2 pint) pudding basin. In a separate bowl, beat the butter and caster sugar together until pale and fluffy. Meanwhile, melt the chocolate by the usual method (in a heatproof bowl set over a pan of barely simmering water), and then stir it into the butter mixture. Beat in the egg thoroughly, and then sift the flour and cocoa into the bowl, and fold in thoroughly. Then stir in the cherries.
Pour the sauce into the greased pudding basin, and add the pudding mixture on top of this. Bake in a preheated oven at 180?C (355?F, Gas Mark 4) for about 40 minutes, and serve immediately.

An apple crisp is a tasty dessert that will about make each member of the family go crazy. The heavenly scent while it is being baked, together with the sweet taste makes this dessert excellent for any meal. It’s a flavorful treat that almost everybody will surely love and enjoy. There isn’t any big day wherein an apple crisp isn’t served. You can either prepare it for your special guests, or just have it on an ordinary day. It is your call.

Although there are numerous kinds of fruit crisps recipe, an apple crisp is the most commonly served dessert on the table. To basically describe it, it’s a sort of dessert that has fruits on the bottom layer topped with sweet toppings.

you’ll notice that most cafes have their own apple crisp specialty but do you know that you can make your awfully own? That’ll be great, wouldn’t it? After which, you can either use your hands or a nice fork to uniformly add the mixture on top of the apples. Alright, it is almost done. The last thing that you ought to do is to put your baking pan in the cooker for approximately thirty mins. Remember, the time that is required to cook the tasty apple crisp will rely on the cooker that you are using. Just ensure that before you take out your impeccably delicious treat, the apples are tender, but still juicy and the topping is remarkably crispy.

• Frozen cherries and fresh pineapple juice
• Fresh mango and frozen lemonade concentrate
• Fresh or canned pineapple and fresh or frozen concentrate orange juice
• Fresh watermelon and frozen limeade concentrate

What better way to combine two passions (environmentalism and chocolate) than through companies that make delicious chocolate treats that don’t impact the environment?

First up, Endangered Species, which donates 10 percent of net profits to wildlife habitat conservation projects. Their Supreme Dark Chocolate bar has 72 percent?cocoa content in 3 oz., and is gluten free and vegan, and made?with all-natural, shade-grown, ethically traded supreme dark chocolate. The label features chimpanzee artwork from Judi Rideout and is printed on recycled paper (see above photo). The chocolate is ethically or fair traded, guaranteeing the workers fair wages and humane working conditions. This product is also certified Kosher by Orthodox Union. On the inside of the label you can learn about the plight of the chimpanzee as well as additional information on Endangered Species Chocolate.

Green & Black’s, which was the first chocolate bar awarded with the British Fairtrade Mark in 1994,?is another company that makes eco-friendly chocolate treats. I’m a caramel freak, so I’m partial to their Caramel bar, which blends classic caramel and cocoa-rich milk chocolate and add a pinch or two of sea salt to cut through the sweetness. It’s deliciously decadent and available in 3.5oz bars.

Melon is a refreshing treat for breakfast, lunch, a snack or even dessert in the summertime.?Most have a?low calorie count (30 calories per 1/2 cup).

Choosing melons is a snap–be sure the melon you select feels heavy for its size, smells ripe, and yields slightly to gentle pressure at the stem end.

Ripe?melons will keep for up to three days in the refrigerator.

Here are the most common melons you’re bound to encounter this summer:

Watermelon (pictured above)
Watermelons range in size from 8 pounds (Sugar Baby) to 20 pounds (Charleston Gray). Most have green skin marbled with yellow, and bright red flesh.?They are at?their peak from June through August.

Cantaloupe
These melons have raised, netted skin (the skin should be tan–if it’s green, the melon isn’t ripe) and orange flesh, and are available June through November.

Honeydew
Unripe honeydews will never ripen, so be sure to select melons that?are fragrant and have skin that’s?slightly tacky. These are available July through October.

Crenshaw
These melons are bigger (5 to 9 pounds) and globe shaped, with pointed stem ends, yellow skin, and golden-pink flesh. They are in stores July through October.

To me, cherries are the best fruit ever. They’re fun to eat, good for you, and sweet enough to be considered a dessert. In fact, one cup of cherries is only 87 calories, and is a good source of choline, a nutrient in the B vitamin family.

Other stone fruits are equally tasty and offer their own unique benefits.

According to the USDA National Nutrient Database, one cup of sliced apricots is 79 calories and had both vitamin A and beta-carotene. One medium nectarine is only 62 calories and a good source of potassium. One medium peach is a mere 58 calories and also contains potassium and vitamin A. And one cup of sliced plums is 76 calories and contains vitamin A.

Stone fruits are everywhere right now–at the grocery store, at the Co-Op, and even highlighted on some restaurant menus.

When decorating a cake, should you try to keep the serving platter it is on clean? If you think so, there is a simple way to do this. Put down two sheets of wax paper before placing the cake. When done, slide them out each side.

The might apple can be a great substitute in many dessert recipes. Well, at least applesauce can. Try using it in place of oil in your favorite recipe. The dessert will be just as moist, but without the disadvantages of oil.

Separating egg yolks and whites should become second nature for you after a bit. If you find yourself having problems, cool the eggs down. The separation is easier when the sections are cooler for some reason.

from www.enjoythaifood.com I think one of the first “strange” things I saw when I arrived in Thailand was the street hawker selling ice cream. Nothing strange in that you might say (see picture above). However, it was how they served the ice cream (or “i sa-creem” as the Thai call it or “i-dtim” as the kids call it). You can choose to have your ice cream in a familiar cone or plastic cup, or in a bread roll! At first that was too weird to contemplate. But after tasting it, I soon became addicted. If I ever go back to England, I think I will start the craze of selling ice-cream sandwiches. They are really delicious.

People tend to resolve in the new year to lose weight. Indeed, when I worked for a client who ran a diet supplement company, he remarked that January was the year of decision… he got the most business in that month, second only to late spring (I’m assuming pre-bikini season). I did resolve in 2010 to reach my Weight Watchers goal, but that doesn’t mean I’m cutting the sweet stuff entirely. Nope, no way no how. In anticipation of various trips and events in the coming year, I’ve made a few chocolate-related goals. Let’s see how many I actually meet:

1) Get back to the Vosges boutique. I enjoyed my trip to the NYC store this past year. With the possibility of a trip to Vegas or Chicago in ‘10, I’d like to try hitting either one of those stores for some chocolate goodness. Vosges is best known, perhaps, for their salty, smoky sweet Mo’s Bacon Bar, which comes in deep milk and dark chocolate varieties. Both are excellent choices for those looking for a unique flavor, and while I love them both I’m thinking I might actually try to integrate the bars into something truly original. Bacon chocolate s’mores? It just might work.

2) Snag some different flavors of Aero bars. Aero is a European brand – a bar filled with millions of tiny air bubbles. The concept of the bar is that with every bite the bubbles melt and "pop" on your tongue, thereby adding an interesting texture to your chocolate enjoyment.

The milk and mint varieties of Aero are fairly easy to find in the States, but I’m looking for a good deal on a dark bar, or maybe the elusive caramel, which I even have trouble finding online. I did find the strawberry Aero on an eBay store specializing in Japanese imports, however, so there is hope.

3) Sample all of SeventyPercent.com’s top 10 bars. For serious chocolate lovers, this should be your first stop. You’ll find news, events, and reviews of the most exclusive brands. I’ve already tried two of their top ten already, so I’m off to a good start.

4) Try Serendipity’s Frrrozen Hot Chocolate. Serendipity in New York City makes this special treat any time of year, and I’m told it’s a must try. I’m due for another NYC trip soon. I’ll set the Weight Watchers points aside for it, and maybe while I’m there I’ll try the Chelsea Market shops and see what bars and truffles are waiting to be sold.

How will I do with this year’s resolutions? I can tell you I’m certainly looking forward to keeping them. I’ll come back in December and let you know how I did, but not how much I gained.

While on my Japanese novelty kick, I came across a selection of Pocky varieties. You might have heard or seen Pocky here in the States – it is a brand of pretzel sticks dipped in chocolate or other flavors. It is probably the more popular of the Japanese sweet imports, and if it isn’t it’s at least the more prevalent. Among the choices available at my local Oriental grocer was Pocky Men’s, the dark chocolate sticks.

As candy, it’s okay. Nothing spectacular, just a nice quick treat if you don’t want an entire bar. What caught my attention, however, was the labeling. Is there a specific reason this is marketed as "men’s" chocolate? Is the less-sweeter designation of the chocolate assigned a gender? Are women forbidden from enjoying it? Are there hormones mixed with the chocolate?

I only mention this because it’s actually not the first time I’ve seen chocolate designated as such. In the UK, there is a brand called Yorkie, a solid bar from Nestle bearing the politically incorrect slogan, It’s Not For Girls. I was given a bar last year as a gift, and upon opening and biting into I’m pleased to report I didn’t sprout whiskers (no more than usual for a gal of Sicilian descent rapidly approaching middle age, anyway) and my voice hasn’t changed. Whether the marketing of this bar attracts more females than otherwise I’m not sure – to me it’s typical drugstore chocolate, enjoyed for the taste and novelty. I find it interesting to see these examples on the foreign market, as I haven’t seen any type of marketing like this in the US. Makes me wonder if men abroad simply don’t eat a lot of chocolate, and this is an attempt to stimulate that demographic.

Recently I received a purchase from eBay – several Japanese Kit Kat bars. If you’re unfamiliar with the way Japan does Kit Kats, you may be surprised to know what flavors are available beyond the milk, dark, and white varieties we get in the States. In fact, I don’t think you can get those there. If one lived in New York City, perhaps, where stores are more likely to carry rare imports, you may have better luck. Otherwise, you are better off studying the Internet for the best deals on unusual foreign treats.

Seems the Japanese, anyway, will put anything between those thin wafers and cover it in sugar cream or chocolate. Exhibit A: the Ginger Ale Kit Kat.

This is probably one of the "safer" varieties I chose, so I’ve decided to try it first (the odder we’ll get, I’ll bring out the camera). Kit Kats, judging from the packaging I received, come in four fingers like the US cousins, but are wrapped in twos and boxed two sets per. The ginger ale flavor, when opened, gave me a stronger lemon than ginger aroma. It’s interesting to note, too, this particular bar has the Kit-Kat brand stamp in English – I sort of expected Kanji.

The texture of the bar is much like the traditional bar, and the taste to me is sweet, almost more lemon at first. There is a ginger flavor finish, however. I’d say it’s reminiscent of an upscale lemon creme sandwich cookie. This would make for a nice palate cleanser.

Considering the other flavors I have yet to try (soy sauce and green tea for two), I’ll save the other ginger ale for last…just in case.

Chocolate is a fabulous Valentine’s Day gift and also a personal one. They are special treats. Everyone has a certain type of chocolate they enjoy the most, so you should use this fact to purchase a box of chocolate for Valentine’s Day that your sweetheart will love.

You should pay close attention to the kind of chocolate she (or he!) picks out when they go shopping in order to figure out what box of chocolates to buy. This will work as people usually do not purchase chocolate they do not care to eat. If this opportunity does not come up, during course of conversation casually bring up a Christmas party where chocolate was served and ask her which kind she liked the most.

If you have difficulty making a final selection, you can buy chocolates from a chocolatier, such as Thortons, who will let you "build" a customized box of chocolates. You can buy several different types of chocolate – white, milk, and dark – and ask them if they want one. The chocolate they choose first will tell you what kind to buy. If you get lucky, they might even tell you what flavor of chocolate they do not like.

There have been many different style king cakes throughout history. Most of them originate back to Epiphany (The Twelfth day after Christmas), and the biblical kings bringing gifts to honor the Child Jesus in Bethlehem. The kingcake has taken its tour throughout the world, displaying traditions from each culture.

The authentic French kingcakes, known as "La galette des Rois" (The cake or "wafer" of the Kings) is made of puff pastry layers, and has a dense center of frangipane. La galette des Rois are sold and consumed during the month of January, Celebrating the Epiphany. French Kingcakes have a small trinket hidden inside as do the New Orleans style KingCakes, but these french cake figurines resemble cartoon characters or cars, etc… instead of the traditional "baby."

The Mexican KingCakes are known as "La Rosca de Reyes" or the "Roscón de Reyes" in Spain (both mean King Cake). These kingcakes are customarily eaten on January 6, during the Dia de Reyes Celebration (The Wise Men Day). The Rosca de Reyes is made in an oval shape with dried or candied fruit for decoration, commonly using figs or cherries. The traditional figurine representing the Child Jesus is followed in these Mexican kingcakes.

Southern Louisiana kingcakes are made of cinnamon bread dough, resembling brioche. This dough is braided or twisted and then baked and decorated. The New Orleans style kingcakes we all know and love are decorated in the colors of Purple, Green, and Gold. It has generally been noticed that when a fruit arrangement has been done nicely, guests hesitate to pick fruits from there and eat because they do not want to spoil the arrangement. They do not realize that the main purpose of that arrangement was that guests could eat from there. If you have invited guests over for dinner or will be inviting them sometimes soon, you can begin making your arrangement for the dining table with a vase or a plate. Baking a cake that is awesome doesn’t take too much work. What it takes is real attention to detail and one special ingredient. I’ll give you my top 5 tips and my secret ingredient.

First, I never get out ingredients until I decide what I want to bake. Many people start doing too much. They get out salt, eggs, sugar and more. All this does is add to the confusion.

Second, I always make sure that my baking area is 100% clean and tidy. I actually clean up before I start to bake. Pretty smart, right? It gets you in the right state of mind too.

Third, I always read the recipe from start to finish. I never just start grabbing pots and pans. I never grab ingredients when I am baking a cake. That’s silly. Get all the details straight in your mind before you do anything.

Fourth, on a related note, I actually visualize how I want my cake to look and to taste. I don’t just read the recipe and throw the cake together. No way! Instead, I actually pretend to smell the cake and I make sure I have a clear picture of everything in my mind.

Fifth, I make sure that I have all my ingredients before I start to mix everything together. How many times have you started getting everything ready when you suddenly realize that you are missing something, like eggs or flour or sugar. That’s just painful. Plan ahead and you will succeed.

And finally, my secret ingredient is love. Sounds kind of silly but if I visualize other people eating my cake, it pretty much forces me to pay better attention. And, it helps me to remember to do things right because I want people to love my cake just as much as I love them. See how that works?

Everyone has heard of good ole’ American apple pie, pecan pie, and key lime pie, but those desserts are just the scraping of the surface when it comes to the terrific desserts that the American culture has to offer. The desserts in this article are also traditional American favorites, but they rarely get the attention they deserve. Mississippi Mud Pie

Ingredients:
1 cup flour
1/4 lb butter (melted)
1/4 cup brown sugar
1 cup finely chopped walnuts
1 tbsp grated coconut
1 (8 oz.) pkg cream cheese
1 cup sugar
1 (9 oz) container whipped cream
1 (6 oz) pkg chocolate pudding

Directions:
In a large bowl, mix together the flour, butter, brown sugar, walnuts, and coconut. When it is well mixed, press it into a 9-inch baking pan. Bake for 15 minutes at 350 degrees F. Remove the crust from the oven and set aside. Next, mix together the cream cheese and sugar. It’s best if you can use a hand mixer for this, as you want it to be nice and fluffy. Fold in one cup of the whipped cream. When the crust has cooled, spread the cream cheese mixture over the crust. Prepare the pudding according to the directions specified on the package. Spread the pudding over the cream cheese mixture, then top with the remaining whipped cream. This looks fabulous when decorated with chocolate shavings or maraschino cherries. Allow this to refrigerate overnight before serving.

Red Velvet Cake

Ingredients:
2 oz red food coloring
1/2 cup shortening
2 eggs
2 1/4 cups flour
1 tsp baking soda
1 tsp vanilla
3 tbsp Nes-Quik chocolate powder
1 1/2 cups sugar
1 cup buttermilk
1/4 tsp salt
1 tbsp vinegar

Directions:
Mix together the food coloring and the Nes-Quik chocolage powder, then let it stand for a bit. In a separate bowl, mix together the shortening, eggs, sugar, and food coloring mixture. Beat the buttermilk and add in some sugar; when this is well blended, mix it into the shortening mixture. Add in the vanilla, flour, and salt and beat well. Mix in the baking soda and vinegar. When the mixture is thoroughly combined, pour it into two well grease 8-inch baking dishes. Bake at 375 degrees F for about half an hour. Allow them to cool before frosting with your favorite brand or recipe for cream cheese frosting.

Peach Cobbler

Ingredients:
1 stick of butter (melted)
1 cup + 3 tbsp sugar (divided)
1 cup flour
2 tsp baking powder
¼ tsp salt
1 cup milk
1 tsp vanilla extract
4 ripe peaches (peeled, pitted, and sliced)
1/2 tsp cinnamon

Directions:
Pour the melted butter into an 8-inch baking dish. In a mixing bowl, mix together one cup of sugar, baking powder, flour, and salt. Mix this together well. Add in the milk and vanilla and give it a good stir. Pour the batter over the butter in the baking dish, then toss the peaches in a bowl with three tablespoons of sugar and the cinnamon. Arrange the peach slices so they sit evenly on top of the batter, then bake at 375 degrees F for about half an hour. Serve hot with whipped cream or vanilla ice cream.

FUDGY CHOCOLATE WALNUT BROWNIES

1 cup + 2 tbsp butter, softened

1 cup Splenda granular

1/2 cup granulated sugar

4 large eggs

2 tsp vanilla extract

1 1/3 cups unsweetened cocoa powder

1 cup all-purpose flour

3/4 tsp baking powder

1/2 tsp salt

1 cup chopped walnuts

1 cup "sugar-free" powdered sugar*

2 tbsp low-fat milk

Preheat oven to 350 degrees. Line a 13 x 9-inch baking pan with foil; spray the foil with nonstick cooking spray.

Cream 1 cup of the butter and the Splenda and granulated sugar in a large mixing bowl using electric mixer on medium speed. Cream until fluffy. Beat in the eggs, one at a time, then beat in vanilla extract until all is well combined.

In a separate bowl, sift together 1 cup of the cocoa powder, flour, baking powder, and salt. Add the dry mixture to the egg mixture and beat until smooth. Stir in the walnuts.

Spread the batter into the prepared pan and place in the preheated oven. Bake at 350 degrees, on middle oven rack for 25 to 30 minutes or until a wooden toothpick inserted in the center comes out clean. Do not overbake. Remove the pan to a wire rack to cool slightly.

To make the frosting, beat the "sugar-free" powdered sugar, milk, remaining butter and cocoa powder together with electric mixer until smooth. Spread over the brownies and cut into squares once the frosting is set.

Yield: 32 brownies

Note: Use omega-3 eggs, if available for more nutritional value

*To make "sugar-free" powdered sugar: using a ratio of 3/4 cup Splenda granular to 2 tbsp cornstarch, place in a blender container and blend until mixture is a fine powder. Use as you would powdered or confectioners’ sugar. May be kept in an airtight container or ziplock bag.

In this 21st Century, raw organic chocolate came into the picture. But… Is raw chocolate good for you or is it just as bad? Both "raw" and "highly processed" chocolate come from the cacao bean. I’ve found the raw chocolate can be both good and bad!

Here’s the good side

1. Higher in antioxidants. I have definitely experienced this since I make my own raw organic chocolate treats. If I’m feeling sick for some reason, eating this treat, will ease it. Please don’t get me wrong. It’s not a cure all for what may be ailing you but it definitely has the power to boost the immune system.
2. Less likely to cause allergic reactions. The only thing I can say about this aspect of raw organic chocolate, you just have to try it and see if it affects you like the processed kind. Just start out with a tiny, tiny bit. You don’t want to turn on a full blown reaction if you are allergic to it.
3. Boosts up nutrition availability since it is usually found in recipes with other raw organic ingredients. When I ate chocolate as a child, I really loved it but I reluctantly learned that I just couldn’t deal with it. I went for 30 years without touching it. I’ve since learned that it wasn’t just the chocolate I was having trouble with, but all the other ingredients that were not necessarily healthy for me. I now always look at the ingredients list before buying anything, and I make my own treats to get full benefit.
4. More healthy nutritional elements are in raw chocolate as opposed to the highly heated chocolate. Back in high school, I learned that heating chemicals together, can create new compounds. This became very significant to me when I applied this to the cacao bean – "raw" versus "roasted." There are an astounding amount of chemical compounds in the raw cacao bean that are very good for human bodies. What do you suppose happens when the beans are heated to over 250 degrees Fahrenheit? I don’t mind creating my own chocolate treats to get the full value from the raw cacao bean.

Now the Bad Side

1. Contaminated skins on raw cacao beans do exist. Bacteria and fungi are present during the procedure of drying the raw cacao beans for both types of chocolate, "raw" and "roasted." For traditional chocolate, cultivating the bacteria and fungi is encouraged after harvesting, so the cacao beans end up with the familiar chocolate taste in the final product. During this procedure, bad microbes can also flourish, but during the high heat process, they are destroyed. With the raw chocolate, it is important to ensure the bad microbes do not flourish. There are certain procedures that are taken to keep the bacteria count very low, and with no mold. I always look for certification of this fact. If not found, I don’t buy. Some cacao farmers and manufacturers do not take the precautions and you can end up with poor quality raw cacao products. As far as the familiar chocolate taste, I have found one type that has that great chocolate taste, without going through the traditional procedures. It’s called Aromica and is grown in Ecuador. I always get the kind that is certified raw, organic and free of mold.
2. It can be very expensive. Sad but true. Raw organic chocolate is way more expensive than the traditional chocolate. I’ve reduced my costs drastically by buying the highest quality ingredients in bulk and making my own treats. It can be pretty easy once you get the hang of it. One thing for sure, we are getting more value for our food dollar.
3. You can eat too much of it. I’ve experienced this maybe once or twice. It was handy to eat and I didn’t want to take the time to fix anything else. The result… a slight headache. Usually I eat 3 oz of my chocolate treat which contains about 50% raw organic cacao beans in the form of cacao nibs and powder. Note: Cacao nibs are the broken pieces of the bean when the skin is removed. Very handy to grind and to make tasty things. I also put about 1 oz of cacao nibs and cacao powder in my breakfast drink. This little bit extra does not cause me any problem.

So there you have my observations on what is good and bad about raw organic chocolate. I’m quite happy with the result and avoid the bad aspects of it, however I can.

French cuisine has developed over centuries to become known as the most refined style of cooking in the world. However, it wasn’t until sometime after World War I that French cuisine became what it is known as today. Known as "haute cuisine", it has become an art form, and great care is taken in the preparation and presentation of French dishes.

The French are well known for their distinguished palates. I had a chuckle when I was reviewing some military rations awhile back. The US rations I looked at consisted of meals such as chicken enchiladas and beef jerky. The French rations were a little more refined, with rabbit pate and salmon a more common choice.

One of my favorite things about French cuisine is the experience of the meal. The meal is created as something to savor and enjoy, and not simply to satisfy a hunger. A good chef will go to great lengths to make sure a dish is prepared just right, and won’t rest until it is.

Fortunately, this great art form is no longer strictly the province of the elite. There are many recipes, books and classes out there to help the "culinarily challenged" among us to enjoy the finer points of haute cuisine without the high price tag. While it may be difficult for the average home cook to capture the full essence of French cooking, there are many recipes that are simple to make that can be recreated by anyone with a little skill.

From simple breads to French Onion Soup to Duck a L’Orange and Crème Brulee, there is a French cuisine recipe for everyone. I’d like to share a simple recipe that anyone can enjoy for "Chocolat Chaud" (hot chocolate).

Ingredients:
- 6 oz. semi-sweet chocolate (use a premium chocolate for a fuller, richer flavor)
- ¼ cup of hot water
- 3 cups of hot milk
- Small amount of sugar to taste
- Whipped Cream (use real cream)

Preparation:

1. Melt the chocolate in a pot with the ¼ cup of hot water
2. Stir in the milk until the mixture is smooth.
3. Pour the hot chocolate into cups and add sugar to taste.
4. Add a spoonful of whipped cream to each cup

Say what you will about the French, there is always one thing you can never dispute: they are masters of the culinary arts.

Nothing in the world tastes like, or smells like nutmeg. There is no substitute for it’s unusual, enticing aroma. Nutmeg is one of the earth’s true culinary treasures, and although we take it for granted these days, that you can just go buy some at the grocery store, for over a thousand years, it was only available to humans from one place…the Banda Islands, which is a remote chain of Indonesian volcanic islands in the Banda Sea, and part of the infamous Spice Islands of legend. Wars have been fought over it’s control, and at one time in Europe, a small handful of nutmegs would have bought you a comfortable and wealthy existence for the rest of your life! Fortunately nutmeg is considerably less costly, and easier to obtain in the modern world, and we are free to use it as we wish to create flavorful and unique recipes…such as bittersweet chocolate and nutmeg truffles!

Nutmeg is one of those spices that you simply must purchase in it’s whole form. If you are going to attempt the following chocolate truffle recipe, please do not try to substitute store bought, ground up nutmeg for fresh grated nutmeg, it simply is not acceptable, and the resulting truffles will be a pale comparison to the real thing. The minute a nutmeg is ground, it begins losing it’s vitality and precious oils. Nutmegs are actually the seed of a special species of evergreen tree, and they should be purchased whole, and grated with a nutmeg grater, as close to the recipe preparation as possible.

Start by finely chopping about 200 grams of an excellent bittersweet chocolate. Place the chocolate into a mixing bowl, and set aside. In a heavy bottom sauce pot, place about 80 grams of fresh heavy cream. Bring the cream to a scald, and take off the heat. Grate in about 1 teaspoon nutmeg, or a bit more if you really enjoy it, and immediately pour over the chopped chocolate. Wait for a minute, and then begin stirring the chocolate and cream mixture in small circles, with a rubber spatula, until very well blended and creamy. While the ganache is still very warm, massage in about 20 grams of unsalted butter, until the entire mixture takes on a high gloss sheen. Let it sit for about 30-60 minutes, or until you can easily shape it into small truffles using a teaspoon. Plop the truffles right into a bowl of excellent cocoa, and roll them around until well coated. You can serve these with coffee, tea, or perhaps a fine cognac would be nice!
