Healthy Wheat Germ Lemon Squares

I am a diabetic so I have to watch what I eat. I also have other health problems that I have to be aware of. But I love sweets and desserts. And I don’t intend to live without them. Maybe you, too, have health problems or perhaps you just promised yourself or your doctor that will try to improve your diet. Give these delicious Wheat Germ Lemon Squares a try. You’ll be glad you did!
WHEAT GERM LEMON SQUARES
Crust:
1 cup flour
3/4 cup wheat germ
1/2 cup “fake” powdered sugar*
1/3 cup butter, softened
Filling:
1 1/2 cups Splenda
1/2 cup sugar
1 tsp baking powder
4 eggs
1/2 cup fresh lemon juice
1 3/4 tsps grated lemon peel
“Fake” powdered sugar*
Heat oven to 350 degrees.
Lightly spray bottom of a 9 x 13-inch baking pan sprayed with non-stick cooking spray. Combine crust ingredients in a large bowl. Mix with electric mixer on low speed until well blended. Mixture will be crumbly. Press crumbs firmly onto bottom of pan. Bake 15 minutes at 350 degrees.
To make filling, combine Splenda and sugar well in a large bowl. Add flour and baking powder and mix well. Add eggs and blend well. Gently stir in lemon juice and peel. Carefully pour over the hot crust. Bake 25 to 30 minutes or until the edges are a light golden brown and the filling is set. Cool completely. Sprinkle with powdered sugar and cut into squares.
